As part of the Hotel's refresh, Jonah’s welcomed a new Executive Chef, Matteo Zamboni, launching new menus across the property including an A La Carte and Degustation menu along with in-room dining, terrace and function menus. Italian born Matteo Zamboni’s impressive career has included him opening his own restaurant Zambo in Surry Hills, prior to that, he worked at 2 Hatted Pilu in Freshwater as Head Chef, 2 Hatted Ormeggio at the Spit, 3 Hatted Quay Restaurant Sydney, 3 Michelin Star RyuGin in Tokyo and Head Chef for the royal family in Qatar, Doha. “With so many loyal diners and people who have incredible memories of dining and staying at Jonah’s, I’m excited to add my own influence to the menu" stated Matteo.
