Opening Olio Kensington St over a year ago, Sicilian-born chef Lino Sauro has proven to thrive in the hyper-competitive Sydney restaurant scene, creating a unique dining experience within Inner-Sydney, sharing generations of passion, knowledge and a strong connection to traditional Italy in his cooking style.


Born in Sicily, Lino comes from a long line of farmers. Growing, harvesting and preparing their own food was a way of life for Lino and his family. With over 30 years of experience in the hospitality industry, including stints in leading restaurants in Italy, Germany and Singapore, Lino brings a cosmopolitan flair to traditional Sicilian cooking.


Olio Kensington – located within the emerging, young and vibrant area of Chippendale, once an old rum store has been beautifully restored to create an exciting urban experience transporting diners to a subtlety themed, contemporary Mediterranean space. With dishes to match some of the must-try dishes include the Risone Pasta served with Sundried Tomato Pesto, Raw Tuna and Caper Leaves as well as the signature Brioche Granita.
